Cassoulet Dinner – An Autumn Celebration in Tateshina

Following last year’s successful event, we are pleased to host another one-night-only dinner featuring cassoulet, the traditional dish of southwestern France.

Join us on Saturday, October 10, 2026, in the Tateshina Highlands, just as the first signs of autumn begin to color the landscape and enjoy an evening of fine cuisine.

At this year’s event, Executive Chef Tatsuya Hoshino, who trained under renowned Chef Keiji Azuma, a finalist in the 8th World Cassoulet Championship in Toulouse (2024), will present a classic cassoulet made with seasonal ingredients from the local Shinshu region.

Before dinner, enjoy an aperitif in the Winter Garden, accompanied by live flute and piano music that evokes the elegant spirit of France.

Additionally, a specially curated French wine pairing set, selected by our sommelier, will be available for an additional charge.

Enjoy a special day in the Tateshina Highlands, where the early arrival of autumn blends with the warmth of cassoulet and the elegance of a “refined everyday life”.

◆What is “Cassoulet”?
Cassoulet, one of France’s most iconic traditional dishes, is made with slowly simmered white beans, duck confit, sausages, and salted pork. It is traditionally prepared in an earthenware pot called a cassole, and finished with a beautifully crisp, golden crust that enhances its rich, hearty flavor.
