On Saturday, October 12, and Sunday, October 13, 2024, as the Tateshina Highlands are beautifully transformed by the autumn foliage, we will host a two-day event dedicated to enjoying the traditional Southwestern French dish, cassoulet. Under the supervision of Chef Keiji Azuma, who advanced to the finals of the “8th World Toulouse Cassoulet Competition” held in April 2024 and has honed his skills at Michelin-starred restaurants across France, we will offer a classic, satisfying French cuisine featuring local ingredients.

Our cellar holds over 2,000 wines imported directly from France, and our in-house sommelier will recommend wines to complement your meal and preferences.

Additionally, there will be a mini-concert in the hotel lobby featuring a bandoneon and a Bechstein piano.

Moreover, Saturday the 12th of October is when the Tateshina Lake Fireworks Festival will take place. Guests can enjoy the display from our garden or the lakeshore, as fireworks light up the autumn night sky. Experience two special days at Tateshina Highlands, where you can enjoy a warm Cassoulet along with a “refined everyday life” as autumn arrives early in the highlands of Japan.

  • Homemade smoked Shinshu salmon with Greek-style marinated vegetables
  • Rich fermented mushroom cream soup with truffle
  • Terrine of Blue Lobster and Langoustine with two sauces
  • Carcassonne-style cassoulet
  • Special dessert by the patissier

Cassoulet
This traditional dish from southwestern France is slow-cooked in a clay pot known as a “cassole,” from which the dish gets its name. It combines white beans with various charcuterie such as salted pork, goose or duck confit, and sausages. After simmering for hours, it is finished in the oven to give it a golden crust.
